Broccoli Black Bean Stew

When my husband had some high cholesterol issues, we switched over to no-cholesterol meals, and this was and continues to be his favorite.  And he is NOT a broccoli lover.  Something about the rosemary makes this dish really tasty!  My little boys even gobble it up.  It's simple, easy to make, and could even be prepared in a crock pot.  Try it - you will NOT be disappointed!

The Recipe: Broccoli Black Bean Stew


The Ingredients:
2 bags fresh/frozen organic broccoli florets, cut into bite-sized pieces
2 cans  organic stewed/diced tomatoes *if stewed, make sure you chop the tomatoes into bite-size pieces*
2 cans organic black beans, drained and rinsed
1/2 onion diced
2-3 cloves garlic finely diced
1/4 cup organic E.V.O.O. (extra virgin olive oil)
2 Tbl. organic crushed rosemary
salt and pepper to taste

The Directions:
1. Saute onion over medium heat in e.v.o.o. until translucent
2. Add garlic and cook for a couple min.
3. Pour in tomatoes and beans
4. Add rosemary, salt, pepper, broccoli and stir, reduce heat to low
5. Cook for approximately an hour, or until desired tenderness is achieved - stirring every few min.

Cool and serve!

Family meal ideas
~ If your family is used to having meat with dinner, serve a side dish with meat for them (but this stew is really filling and satisfying!).
~ If they are used to having more carbs, serve this with a side of spelt toast or brown rice.  Yum!
